Generations of Cultivation

“

Fungi respect patience far more than machinery. We tend our substrates as our grandparents did, letting cool coastal canyon moisture and clean oak shavings shape mushrooms with deep, uncompromising vitality.

Founding Mycologist · Fillmore Farmstead

Rooted in the Heritage of Fillmore's Heritage Orchards

Tucked beneath the slopes of the Topatopa Mountains along the Santa Clara River Valley, our family began cultivating edible mycology over forty years ago. What started as hand-poured culture dishes inside a repurposed citrus packhouse has matured into an artisanal haven where heirloom strains thrive in quiet balance with southern California's microclimates.

We operate completely free of chemical boosters, commercial fungicides, or synthetic stimulants. Every cluster is nurtured on clean local hardwood sawdust, organic wheat bran, and filtered spring runoff. By mimicking the dappled shade and natural diurnal humidity cycles of native forest floors, we allow slow mycelial expansion that produces dense flesh, nuanced umami profiles, and unmatched freshness.

  • Sustainably harvested regional oak & alder sawdust substrates
  • Pure filtered mountain spring irrigation with zero synthetic additives
  • Hand-harvested daily at peak spore maturity for optimal shelf vitality

GROWING PROTOCOL

The Lifecycle of a Spore

Cultivating gourmet cultivars like Lion's Mane (Hericium erinaceus) and cold-weather Shiitake (Lentinula edodes) requires microscopic cleanliness and precise climactic stewardship. Unlike common button varieties, specialty wood-decay fungi demand sterilized hardwood substrates, dialed humidity vapor, and gentle airflow cues to transform unseen mycelial threads into dense, nutrient-dense culinary flushes.

LAB STAGESPAWN RUNFRUITING

Every specimen is tracked by lineage lot, verified for microbiological purity, and harvested within a 6-hour window of peak culinary firmness.

STAGE 01 — ASEPTIC INOCULATION

Agar Culturing & Grain Spawn Infusion

Under positive-pressure HEPA laminar flow hoods, genetic clones are cultured on nutrient agar plates to select the most vigorous rhizomorphic sectors. Once isolated, the mycelium inoculates organic rye berry spawn, germinating in sterile suspension free from competitive airborne contaminants.

Critical Control: 99.99% sterile transfer threshold at 0.3 microns · 14-day agar screening cycle

STAGE 02 — COLONIZATION & INCUBATION

Hardwood Substrate Assimilation

Colonized grain spawn mixes into enriched sawdust blocks formulated from local oak, beech, and soy hulls. Over 3 to 8 weeks in light-attenuated incubation chambers, fungal hyphae knit through the dense lignin, synthesizing organic enzymes that unlock dense beta-glucans and earthy aromatics.

Critical Control: 21°C steady core heat · Automated CO₂ venting under 2,200 ppm

STAGE 03 — MICRO-CLIMATE FRUITING

Primordia Pinning & Delicate Harvest

Blocks transition into computerized fruiting rooms where ultrasonic cold fog maintains 92% relative humidity. Filtered fresh air initiates primordia formation ('pinning'). Within 5 to 10 days, delicate Lion's Mane icicles and crinkled Shiitake caps expand to full maturity, hand-culled with curved harvesting knives.

Critical Control: 90–95% ultrasonic vapor density · 8 fresh air exchanges per hour
